Since we live in Singapore, this list will be periodically updated as we eat at more places. I've organized the below by category.
* next to the restaurant name means there is a separate gluten free menu you have to ask for. Otherwise the restaurants have labels on the menu or your can talk to your server.
If I have listed "GF" next to the name of a dish, that's because you have to request the GF version of that dish. For instance, Amo makes both regular calamari and GF calamari (in different fryers).

“Mexican”
I put this in quotes because none of this food is truly Mexican. At best, it’s Tex-mex. At worst, the owner went to a Taco Bell once and that is the entirety of their knowledge of “Mexican Cuisine”. (I’m looking at you, Baja Fresh!)

Burrito bowls, nachos, corn tacos, and salads are all GF at these restaurants.

Note that they use one griddle for everything, so there is a possibility of cross contamination from the quesadilla. I’ve taken the risk many times and have not had symptoms after. YMMV

They also have GF beer on the menu!
Sushi & Indian
Do these cuisines belong in the same category together? Not usually. But when we're talking gluten free options on the island of Singapore, they do.
Any sushi restaurant can make you a nice gluten free sashimi or nigiri. You can even go to a cheap and cheerful sushi conveyer belt place and just get the nigiri as it rolls around. (My fav is Sushiro but you can go to any of them). Avoid anything with a sauce on it/rolls and BYOTamari packets and you'll be happy as a clam.
Any Indian restaurant will have a plethora of options for you. My go-tos are either biryani (which is always served with pappadum, not naan, so don't worry about the last minute contamination of your meal as they plop a naan on top) or a well-known main like saag paneer, lamb rogan josh, chicken vindaloo with rice. Avoid daal if you can as there is a chance hing/aesofoetida (which is glutenous) has been added.
